I learned about canning in my Mama's kitchen. I have many pleasant memories of standing on a chair in front of the sink "helping" to peel and prepare fruit and vegetables from her large garden and numerous fruit trees.
Though I didn't realize it at the time, my Mama would have been labeled a rebel canner by today's standards because of all the things she canned. She was very careful but she had learned many techniques and methods from her Amish and Mennonite background and years of canning experience.
This book is a compilation of recipes and variations of techniques that were learned or developed through time and my own personal experience but it all started with what I observed and learned from my beautiful Mama. Learning the art of canning at her feet was a wonderful gift that I treasure.
